I have been reading about cashew ranch dressing for years but never had the courage to make a batch. Day 3 of the Elimination Diet seemed like a good time. I used this recipe, which is very similar to all the other recipes out there. At first taste it was not good. Being the optimist that I am, I decided to stick it in the fridge and let the flavors meld overnight.
I pulled out the jar when making lunch, gave it a taste, and pronounced it inedible. One of the worst things that I have ever tasted. I can not believe people think soaked cashews are a fine dairy substitute. Ew. I will be sticking to my oil dressings for the foreseeable future.
