With the kitchen renovations I have had very little opportunity for canning. The produce sections are overflowing with such beauty that I just have to take advantage of the season. Next week, I will do my best to sneak in two canning sessions.
Salsa Verde. The first time I made this I put up just one batch, I think it was three jars. They were eaten so fast that I put up more, a double batch. Not even that did the trick, we have been out for months. This time it will be 12pound of tomatillos. I can't wait!
Raspberry Jam. My trusty canning notebook tells me that last year we had 21, 1/2 pint jars of Raspberry Jam. We have three jars left. I will aim for the same amount this year, four flats.
Maybe I should warn the produce guys?
